Why This Recipe Works
To make this popular portable breakfast, we smoothed out protein-rich cottage cheese in the blender and then whisked in eggs to create a smooth and creamy custard. Shredded Gruyère cheese and cooked chopped bacon interspersed pockets of texture and flavor throughout each bite. We divided the fillings equally among the cups of a muffin tin and placed the tin in a water bath in a 325-degree oven. This ensured that the egg bites cooked evenly and gently, avoiding any curdling or overcooking. After the bites cool, they can be popped out of the tins and enjoyed on the spot or held in the fridge (or in the freezer) and microwaved as needed for a nutritious, ready-to-go breakfast.
