Why This Recipe Works
Our rhubarb shortcake is a unique and delicious take on the classic strawberry shortcake. Rhubarb breaks down quickly when cooked, so we slowly baked it to keep its texture and shape. To balance rhubarb's distinct bitter taste, we added a carefully calibrated amount of sugar; we also added some lemon juice to brighten the flavor. For the rustic shortcakes, we used generous amounts of butter and buttermilk to give them a buttery, tangy flavor. We cut them into squares to minimize waste and squared off the edges to ensure that they puffed up and stayed square. Adding buttermilk to the whipped cream accentuated the tartness of the rhubarb, and omitting vanilla extract allowed the buttermilk's flavor to shine. Want more? Read the full story.
