Why This Recipe Works
Bibimbap, an iconic Korean dish with many regional variations, features rice mixed together with various toppings. The combination of the hot stone and a splash of fragrant sesame oil causes the rice to develop a delicious, crunchy crust called nurungji wherever it touches the dolsot. The key to developing crisp, golden nurungji is to leave a thin layer of the rice touching the dolsot undisturbed while mixing the rest of the rice with the toppings. We wanted to create a bibimbap recipe that could be made without a dolsot but would still result in plenty of nurungji. We also wanted to cut down on the sautéing and knife work. We made our version of bibimbap by substituting one enameled cast-iron Dutch oven for a set of stone bowls; using just three easily prepared sautéed vegetable toppings instead of the usual six or more; and turning the pickles, sauce, and vegetables into make-ahead options. We skipped the traditional step of rinsing the rice before steaming it to save time. A quickly pickled mixture of bean sprouts and cucumbers added crisp brightness.
