Why This Recipe Works
Our Olive Oil Cake is a reader favorite, and many have requested that we create a chocolate version. Doing so required several changes to the original recipe, but the new version turned out to be even easier than the original since it's mixed by hand rather than in a stand mixer. A combination of unsweetened cocoa powder and melted bittersweet chocolate provided deep, rich flavor. By replacing some of the flour with cocoa powder, we reduced the overall gluten content, making the cake soft and tender. We wiped any excess grease from the sides of the pan to ensure that the batter could climb as the cake baked and we omitted a single egg white to make the batter just viscous enough to hold the cake's crackly sugar crust in place.
