Why This Recipe Works
These chili-and-spice-braised beef tacos hail from Jalisco, Mexico, where they are traditionally made with goat. Our recipe is inspired by the wildly popular beef birria tacos served by Chef-Owner Mateo Otero at Rollies Mexican Patio in Tucson, Arizona. Large pieces of beef chuck were slow-cooked in a braising liquid perfumed by guajillo chiles, onion, garlic, bay leaves, and warm spices. The tacos—corn tortillas packed with shredded beef, mozzarella cheese, red onion, and cilantro—were griddled to crispy perfection and served with a small bowl of the rich, redolent broth for dipping the tacos between bites.
